[docs]: perlmutter deployments

Please describe the issue

Currently there is a deployment documented here:

https://e4s.readthedocs.io/en/latest/deployment.html#perlmutter

That is a few releases out of date.

I see on the dashboard there are newer versions, but again, out of date:

I'm happy to help work on a solution here if you want to provide an e4s stack for the users.

If you'd rather we just point them at containers or spack.yaml files and have them build it out themself that would be fine as well.
