backend: collections: make it possible to request less information #1107
Description
this only becomes relevant once we have at least 100 collections for one organism (probably not even then)
at the moment (which is fine for now as well) we always return all collections for an organism, also with all variants.
We should probably consider supporting pagination, and also not always returning the variants, maybe just a count instead. For the overview table, we don't need the full variants.
