Refactor Android app build to be compatible with Gradle 9.0 and Android Studio 2025.1.1

The app is kind of a nightmare to set up at the moment, especially if you want to run the Android app. The setup instructions should help, but the app isn't working with the current Android Studio version. We need to work on changing out libraries and functions that are deprecated and just overall cleaning up the Android app build.
