Please add version tags to Docker images #481

Thanks a lot for the great work on Peppermint. It is a fantastic project and really useful for lightweight support workflows.

I noticed that the Docker image is currently only available under the latest tag. This makes it difficult to manage updates reliably especially in production environments as there is no way to track which version is running or to roll back if needed.

It would be very helpful if you could push tagged versions of the image that match release numbers for example 0.5.5 0.5.4 etc alongside latest. This would improve reproducibility and stability for all users relying on containerized deployments.

Thanks again for your work!
