Sure, it may looks nice ... on Gnome, elsewhere it looks worse, especially the fact that the hugely rounded corners make the shape of the window impossible to integrate with any other desktop environment.
The hamburger is essentially unusable.
Here's what I'd suggest. Move the menubar to the titlebar like every other application these does, or at the very least move the hamburger to the left and have it fan out on hover. Just don't do it like Gimp - you should actually make it possible to drag the window from the menubar, no reason not to.
Sure, that doesn't fit Gnome's exact guidelines - no desktop app on any other platform does - but that's their problem not yours. And as it stands, your app doesn't fit Gnome's design either, it's feels like someone just took a regular app and slapped a constricting gnome skin on it.
Also the dynamic toolbar thingy most of the time just wastes copious amounts of space, so you could easily stuff your headerbar toolbar into that space.
The right sidebar also looks silly, with a divider line that just ends nowhere.
My advice is go to Gnome and tell them what you need to make the interface work. Hopefully Gnome will update their HIG and widgets in order to allow for the sort of interface your app actually needs to be HIG compliant. Trying to redesign your app around their existing HIG as is has led to the current result, which is unambiguously bad. If Gnome doesn't oblige, then just design the app the way you want and give it the UI it actually needs.
