MongoDB Source Connector

Description

As stated in #2753, iggy currently has a Sink connector for MongoDB, and it is missing a Source connector.

This would add a new source and effectively close #2739.
If no one is currently working on it, i would like to be assigned, and will follow up with a proposed solution

Sorry for the delay. I believe i've got the basics for the MongoDB Source connector. I was able to validate the messages going to the specified partition, state being used & polling happening. I don't know if there are stuff missing or what is the DoD for a source, would you mind a bit of reviewing when possible? ( also, should i already create a PR?, if no, here is the fork commit: 9e966c3#diff-196c6dfcdaa91e49425b7e6da914cb9e12b0a1c41349af2d7e3139f2568d40e1 )

@Luishfs - this is an interesting way to share "proof it works" - probably going to steal this method for the next PR I raise!
