Bump arrow dep from 56 to 57

Duckdb-rs currently depends on arrow 56.

57 was released 2 months ago. Updating to it would unlock other dependent updates (for example, arrow-pyarrow 56 uses pyo3 0.25, while arrow-pyarrow 57 uses pyo3 0.26).

Note: I'll try to propose a PR layer this week.
