Migrate the documentation to use Starlight

I really like the Diátaxis framework, but I kinda dislike the UI/UX of the site. It might be worth a though, migrating the docs to the Starlight framework. But that's also a personal preference, I'm open for ideas 💡

That's definitely never going to happen. The site uses RestructuredText, Sphinx and the Read the Docs platform.
