create scripting to automatically capture GitHub repo stats

Inspired by this work @jjasghar has done for collecting stats in the taxonomy repo, I note that it would be great to automagically capture relevant GitHub stats for the entire InstructLab project.

Red Hat OSPO does this work via Project Aspen using internal tooling, but if we had some cool magic way to pull these stats using non-internal tooling that would be groovy.

Adding this to the never ending things we need to do real soon(TM) list.

@mingxzhao this does not look as simple as adding links, but I could look into it with some python scripting :)
