Change looks good but cannot be merged in master since it is breaking and we might need to add bug fixes before it is actually used in production.
You could make it non breaking by maintaining the old properties an only adding the new ones. I'm assuming both old an new pipelines would work with this.

Regarding Tim's comment, we can also use a feature branch, and make a dev release on pypi to use with the integration tests

Yes, that was the idea. To have a separate release for Java-21, like others.
@tcezard I have now created a new branch java-21 in origin and changed the target to it.
