feat(website): disable collections for Influenza A and B#1121

Add hasCollections flag to organismConfig to control whether an organism appears in the collections menu and overview page. Set to false for influenzaA and influenzaB which don't have collections support. Co-Authored-By: Claude Sonnet 4.6 <noreply@anthropic.com>
