chore!: rename document-related exports to use "docs" in naming

Currently stacked on #144 .

Closes #39 . Opted for using doc/docs instead of document/documents to align with the naming pattern used in core and schema.

This PR also regenerates the API documentation. As noted in #121 , the output is a bit broken (mostly some input and return types that are too wide) but I think it's okay for now. Better to have an idea of what's generally available.
