Align timestamps

Description

We have to define the terminology around the timestamps we use throughout the application to avoid confusion:

• The date of issuance of a credential (following the business logic)
• The date of creation of a credential
• The date of expiration of a credential
• Are those dates always aligned with the technical iat and exp claims in the JWTs?
• Is the logical "time of issuance" the time when the offer has been created or the time when it was accepted by the recipient?
• Is the iat claim the time of issuance or the time of creation?
