docs: update tool counts to 101 / 256 - #27

The Alpaca specs dropped the crypto-perp/index/PDT operations, so the default trading,data toolset is now 101 tools and all four total 256. Refresh the README badges/copy and the CLAUDE.md note. Co-Authored-By: Claude Opus 4.8 <noreply@anthropic.com>

The v1.1.0 regeneration dropped Alpaca's deprecated crypto-perp, index-values, PDT, and trade-SSE operations, so the tool counts changed.
