Align organization profile with the cross-surface product

What changed

• replaces the obsolete browser-only launch plan with the durable cross-surface qualification and launch contract
• aligns the organization profile with the Beta product across browser, native desktop, RDP, and Citrix/VDI
• updates Desktop to its current Beta supporting-surface lifecycle and keeps the repurposed agent bridge active
• records a product-centered organization pin set and current repository-description targets
• keeps the flagship OpenAdapt star count explicitly attributed to the overall project
• adds a consistency check for the intended pin set

Why

The live organization still omits openadapt-flow and openadapt-desktop from its pinned repositories, and the live Desktop description still advertises the superseded screen-recording/training-data direction. The public launch plan also contradicted the target state by freezing launch work to browser-only.
